Main Ingredients:
2 cups all purpose flour; oil.

  • ¼ tsp carom seeds (ajwain)
  • ¼ tsp nigella seeds (kalonji/kalojeera)
  • ½ tsp salt
  • ½ tsp baking powder

  1. Take flour, carom seeds (ajwain), nigella seeds (kalonji/kalojeera), baking powder, salt and 2 tsp of oil in a bowl. Mix well.
  2. Make a dough. [use warm water for making the dough].
  3. Knead the dough with your palm for 10 minutes to make it smoother.
  4. Apply 1 tsp oil and knead for another 5 minutes.
  5. Cover and rest it for 30 minutes.
  6. Divide the dough in two equal parts.
  7. Flatten each dough into a thin disk.
  8. Cut the disk vertically and diagonally to give each part a diamond shape.

  9. Heat oil in a pan [for deep frying].
  10. When the oil is hot enough, add the diamond shaped nimki to the oil.
  11. Fry it in medium flame till they are red brown.
  12. Remove these from oil and place on the kitchen tissue/ paper towel. Let the oil to be soaked completely.
  13. Keep it in a airtight container.
  14. Serve it with tea/coffee as evening snack.
