Main Ingredients:
4 hard boiled eggs peeled and cut into half each; 2 tbsp poppy seed/posto/khus khus; 1 medium-sized onion chopped; 2 green chillies cut into half each; 1 tsp mustard oil.

Spices:
  • 1 dry chilli
  • ½ tsp kalonji/kalojeera
  • 1 tsp turmeric powder
  • Salt to taste

Steps:
  1. Make a thick paste of poppy seed. Keep aside.
  2. Heat oil in a pan and fry the eggs till they turn to golden brown. Take them out of the pan.
  3. Temper the same oil with dry chilli and kalonji/kalojeera.
  4. When an aroma comes out, add the chopped onion. Fry until it becomes translucent.
  5. Add green chillies along with salt and turmeric powder. Fry for a minute.
  6. Add the poppy seed paste along with 1 cup of water. Cover it and cook for 3-4 minutes.
  7. Open the lid, add the eggs and cover it again for 2 minutes.
  8. Spread 1 tsp mustard oil and turn off the heat.
  9. Now it is ready to be served with plain rice.

Tips:
  1. Add ½ tsp turmeric powder to the oil just before the frying of eggs. It makes a good colour on the eggs.
  2. Use a thread for cutting eggs.
