Main ingredients:
400 gm raw jack-fruit cut into pieces; 2 medium-sized potatoes cut into four pieces each; 1 medium sized onion chopped; 1 tsp ginger paste; 1 tsp garlic paste; 1 big tomato chopped; 4 green chilies ; 1 tsp ghee (clarified butter).

Spices:
  • 2 bay leaves
  • ½ tsp whole cumin
  • 1 inch cinnamon stick
  • 3 green cardamoms
  • 3 cloves
  • ½ tsp bengali garam masala powder (cinnamon, cardamom and clove)
  • 1 tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp chili powder
  • 1 tsp turmeric powder
  • Salt and sugar according to taste.

Steps:

  1. Heat oil in a pan. Fry the potato pieces till golden brown and keep aside.
  2. Temper the same oil with whole garam masala (cinnamon, cardamom and clove), bay leaves and whole cumin. when the cumin seeds start to splutter, add the chopped onion. Fry till it becomes translucent.
  3. Add ginger-garlic paste. Fry till the raw smell of ginger and garlic goes away.
  4. Add chopped tomato and green chilies. Fry until the tomato pieces become soft.
  5. Now add raw jack-fruit. Mix well.
  6. Add salt and turmeric powder. Stir well.
  7. Add cumin powder, coriander powder, chili powder and sugar. Mix and cook it in medium heat for about 15 minutes.
  8. Add water (preferably warm water) and cover it. Allow it to cook in low flame until the raw jack-fruits are almost done.
  9. Open the lid, add the fried potatoes and cover it again. Cook it in low flame until the vegetables are fully done.
  10. Open the lid, adjust salt and sugar.
  11. Add ghee and garam masala powder (cinnamon, cardamom and clove). Give it the final stir and rest it for 2 minutes.
  12. Turn off the heat and serve it with rice, roti/chapati.
