Main ingredients :
1 cauliflower cut into medium-sized pieces; 2 potatoes cut into pieces (lengthwise); 1 cup green peas; 1 big tomato chopped; 2-3 green chillies.

Spices :
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp sugar
  • ½ tsp paanchphoron (whole cumin, whole fenugreek seed, fennel seed, kalonji, radhuni)
  • Salt according to taste.

Steps :

  1. Temper the oil with paanchphoron. Once the paanchphoron starts to splutter add potatoes and cauliflower pieces along with a pinch of salt and turmeric powder. Fry it for 5-6 minutes.
  2. Add tomato, peas, green chillies and fry for another 5-6 minutes on medium heat.
  3. Add all the spices (except paanchphoron) one by one and stir until the oil starts to separate from the vegetables.
  4. Now add some water, put a lid and let it cook in low flame till the vegetables are done (approx: 12 mins).
  5. Turn off the oven when the water dries up.
  6. Serve it with roti (chapati), paratha or luchi.
